Plum and Lemon Mini Pound Cakes with plum glaze

Moist lemon pound cake studded with tangy chunks of plums and a sweet, crackly plum glaze. These mini pounds cakes are perfect for a morning or afternoon tea!

Ingredients

  • 110 g Flour
  • 1 tsp Baking powder
  • 2 Eggs
  • 110 g Unsalted butter
  • 100 g White sugar
  • 20 g Lemon supremes (flesh of lemon)
  • Zest of one lemon
  • 2 Small plums

Glaze

  • 90 g Powdered sugar
  • 10 g Plum puree
  • 5 g Lemon juice

Instructions

Pound cake

  1. Preheat the oven to 160C/320F
  2. If using a muffin tray butter and flour the tin, you can skip this step if using a silicone mould
  3. In a stand mixer or with an electric whisk beat the butter and sugar together until pale, light and fluffy (3-5 minutes)
  4. Add the eggs one at a time beating in between, then continuing beating for another 2 minutes
  5. Add the lemon zest and flesh
  6. In a medium sized bowl whisk the flour and baking powder together
  7. Add the flour mix to the butter and fold until just combined
  8. Transfer to a muffin tin or silicone mould and bake for 25-30 minutes- or until an inserted skewer comes out clean, cool

Glaze

  1. Combine all ingredients in a bowl and mix until smooth, it should be thick enough to hold a drip down the cake, but not so thick that it is clumpy (you can test this on the side of a bowl)
  2. If you find the colour isn't strong enough you can add some purple food colouring
  3. Spoon the glaze onto the cooled cakes, allowing it to drip down the sides
  4. Let the glaze set for 1 hour, then enjoy!
