MATCHAA, I know I always say this, but once again it’s one of my favourite flavours to play around with because of its unique flavour. The slight bitterness goes well with so many desserts and one of those is white chocolate. The sweetness of white chocolate is the perfect match(a)!
This is a treat I came up with when I was developing a new dessert for The Rice Den, the restaurant I’m currently working at. Right now I am so blessed to have the opportunity to create a new dessert every two weeks for the chef’s selection banquet, and this is the latest one! Something sweet, but slightly tart and bitter to finish off a delicious meal of Asian cuisine.
Different to the sophisticated look of this dessert it is surprisingly easy. The brownie base is a one bowl deal and its crisp fudginess tastes amazing on its own, but the creaminess of the lemon cheese cream pairs with it so well and only takes 10 minutes to whip up! Add the crunchy walnut crumble and… 🤤

Matcha Brownie with Lemon Cheese Cream
A fudgy white chocolate matcha brownie topped with a tangy lemon cheese cream and crunchy walnut crumble chunks. An asian-inspired dessert which showcases the delicious matcha flavour.

- Cook Time: 30 minutes
- Total Time: 75 minutes

Ingredients
Matcha Brownie
- 180 g White chocolate, roughly chopped (I)
- 100 g Unsalted butter
- 3 tbsp Matcha
- 70 g Sugar
- 2 g Eggs
- 80 g Plain flour
- Pinch Salt
- ½ tsp Baking powder
- 50 g Walnuts, chopped
- 50 g White chocolate, roughly chopped (II)
Walnut Crumble
- 50 g Walnuts
- 50 g Plain flour
- 50 g Unsalted butter, chilled
- 50 g Brown sugar
Lemon Cheese Cream
- 100 g Cream cheese, softened
- 100 g Thickened/Heavy cream
- Zest of half a lemon
- 2 tsp Lemon juice
- 50 g Sugar
Instructions
Matcha Brownie
- Preheat the oven to 180°C / 355 °F
- Melt the white chocolate (I) and unsalted butter in a microwave or bain-marie
- Add sugar, then the eggs one by one, stirring until smooth in between
- Add the matcha powder, flour, baking powder and salt, mix until completely distributed
- Add the chopped walnuts and white chocolate (II) and pour into a brownie pan (7" x 7") lined with baking paper
- Bake for 12 minutes, or until an inserted toothpick mostly clean with a few smudges of green
- Cool and chill in the refrigerator for 1-2 hours
Remove and slice into 14 slices
Walnut Crumble
- Preheat the oven to 180°C / 355 °F
- In a food processor add the walnuts and flour, process until a fine powder
- Add the brown sugar and butter, process until chunks form
- Transfer to a baking sheet
- Bake for 15 minutes, using a fork to break up the crumble half way through baking
- Cool
Lemon Cheese Cream
- Using an electric mixer beat the cream cheese with sugar, lemon juice and zest until smooth
- Add the thickened cream and beat until stiff peaks
- Transfer to a piping bag fitted with a round nozzle
- Pipe small blobs on top of the sliced and cooled brownie
- Top with walnut crumble and serve!

Hi! This recipe looks amazing and I'm working on sourcing the ingredients right now to make this delicious dessert over the weekend! I was just wondering what thickened cream is? Is it just heavy cream? I'm not sure I've ever seen thickened cream where I live. Would heavy cream be a substitute?

Hi Cat! Just wanted to make sure that this is 7"x7" pan instead of 8"x8" you used for the chocolate brownie recipe? 🙂 Also, in the UK we have soft cheese such as Philadelphia which I think has less fat compared to normal cream cheese, anything I should look out for when using soft cheese?

Yep it's a 7' x 7' pan. I've never used soft cheese before so I'm not too sure, would it be something like mascarpone? I'd say to just keep an eye out when whipping it to make sure it doesn't get overworked and add sugar and lemon juice to taste 🙂
