Langues de Chat aka cat tongues are a classic French cookie, this version takes a Japanese twist by sandwiching two crisp cookies around a sweet white chocolate matcha filling. The result is a unique, crisp, moreish, sweet and slightly bitter cookie!

Cookie

  • 50 g Plain flour
  • 50 g Egg white
  • 50 g Icing sugar
  • 50 g Unsalted butter, softened

Matcha White Chocolate Filling

  • 60 g White chocolate, melted and tempered
  • 3 g Matcha powder

Instructions

Cookie

  1. Preheat the oven to 150 °C
  2. Whisk together the softened butter and icing sugar
  3. Add 2/3rds of the egg white and whisk until combined
  4. Add the plain flour and mix until just combined
  5. Add the rest of the egg whites and mix until smooth
  6. Pour batter into a piping bag with a small round tip and pipe 3 cm circles onto a sheet of parchment paper with approx. 4cm between each circle
  7. Tap the tray firmly on the table to spread the circles
  8. Place into the preheated oven for 15-20 minutes, or until golden brown and firm

Matcha White Chocolate Filling

  1. Melt about 35g of chocolate until 42°C (try not to exceed this temperature)
  2. Add the remainder of the white chocolate and mix vigorously until it reaches 29°C (if there are pieces of unmelted chocolate you can just remove them)
  3. Mix approximately a tablespoon of melted white chocolate into the matcha powder, mixing until smooth
  4. Add the mixed matcha chocolate into the remainder of the white chocolate and stir until completely combined
  5. Pour into a small piping bag and pipe onto the flat side of a cooled cookie
  6. Lightly place another cookie on top flat side down
  7. Place in the fridge to set and serve!
