Passionfruit is one of those flavours that you either love or hate. It’s sour, zesty and powerful, and I love using it in desserts because of its impactful flavour. Since it is so strong it’s important to balance it out with sweet and earthy flavours, which is why I incorporated the white chocolate and black sesame praline. The praline takes this cake to a different level, tying the cake together with the crunch and toasty notes!

The hint of rose balances with the slightly floral nature of lychees and the hit of raspberry brings it all together. Inspired by Pierre Hermé’s Isphan macaron, this is my version!
I think the one thing that keeps being requested over and over again on Instagram is to share my macaron recipe! Since there were so many requests for it I wanted to make sure that is was perfect for all of you. On top of that I wanted to incorporate some flavours that were unique to me and super delicious.
