Melt-in-your mouth cookies filled with a fresh strawberry jam, perfect for valentines day
With Valentines day coming up I wanted to leave everyone with an easy recipe that can be made to share with your loved ones. These melting moments are not only perfect for the occasion, but also taste delicious! The addition of custard powder gives these cookies a super crumbly, melt-in-your mouth texture while the egg yolk enriched buttercream gives a smooth texture that goes amazing with the fresh strawberry jam.
Melting moments are a popular Australian cookie, very similar to a shortbread, that can be found in cafes everywhere. They are a lot less common in other parts of the world, but that’s where this recipe comes in! Now you can try these out wherever you are 🙂
These are one of my favourite cookies ever and I would choose these over a chocolate chip cookie any day…Not only that, but this recipe holds a really special place in my baking memories. I remember first seeing this recipe on Masterchef Australia, when the judges were wowed contestant Julia Taylor’s cookies. The first season of Masterchef aired when I was 10 years old, and I pretty much watched every episode of every season religiously. For me Masterchef was one of those shows that really sparked my interest in cooking and making desserts, and I guess you can say that’s how I ended up trying out for a reality cooking show of my own. When I first saw these cookies I HAD to make them, and turns out they uploaded the recipe. From that day onwards this was my go to cookie recipe. Cookie craving? Melting moments. Bake sale? Melting moments. Valentines day recipe? Melting moments. Of course they got a lot better from the first time I made them, and I’ve made adjustments to the fillings, but the base of the cookie recipe is perfect to me and I would never change that.
I know some of the recipes I’ve uploaded recently are not exactly beginner friendly, so I wanted to share something that doesn’t disappoint in flavour while being so easy to recreate. So here it is!

Melt-in-your mouth cookies filled with a fresh strawberry jam, perfect for valentines day

Ingredients
Cookie
- 180 g Unsalted butter (¾ cup)
- 60 g Icing sugar (½ cup)
- 60 g Custard powder (½ cup)
- 180 g Plain flour (1 ½ cup)
Strawberry Jam
- 200 g Strawberries, chopped into small pieces (1 cup)
- 13 g Sugar (3 tbsp)
Buttercream
- 150 g Unsalted butter (⅔ cup)
- 45 g Milk (3 tbsp)
- 18 g Sugar (2 ½ tbsp)
- 1 Egg yolk
Decoration
- Compound white chocolate
- Red/pink and white sprinkles
Instructions
Cookie
- In a stand mixer beat the unsalted butter, icing sugar and custard powder together until light and fluffy
- Add the plain flour and mix until the dough comes together
- Place the dough between two sheets of baking paper and roll out until 5mm thick
- Place in the freezer for 15 minutes
- Meanwhile preheat the oven to 170°C
Once the dough has chilled, remove from the freezer, using a heart shaped cookie cutter cut out heart shapes (the dough can be rerolled, chilled and used again) - If the dough sticks to the cookie cutter dip the cutter in flour before cutting out the shape
- Place all cut out cookie dough on a baking sheet lined with baking paper and bake for 12-15 minutes
- The cookies should be tinged golden and firm to the touch
- Cool
Strawberry Jam
- Put sugar and strawberries in a small saucepan on medium heat, stirring occasionally until it comes to a boil
- Reduce heat to low and continue to cook for 5-10 minutes, stirring occasionally until a thick jam forms
- Remove from heat and cool
Buttercream
- Heat milk on a small saucepan until just steaming
- Whisk egg yolk and sugar in a medium sized bowl
- Pour the hot milk on the egg mixture and whisk
- Return the milk/egg mixture to the heat
- Stir the mixture continuously until it is thick enough to coat the back of a spoon and a line can be drawn through it
- Remove and cool
- Once cooled place room temperature butter and milk/egg mixture together in a stand mixer
- Beat together until light and fluffy
- Place in a piping bag and set aside
Assembly
- Pipe a border of buttercream on the underside of a cookie
- Fill the border with some strawberry jam
- Place a cookie on top to form the cookie sandwich
- Continue until all cookies have been filled
- To decorate melt the compound white chocolate and place in a small piping bag
- Pipe a squiggle in the corner of the heart and sprinkle with sprinkles
- Leave to set

*Cookies can be kept in an airtight container, in the fridge for up to a week ** Or you can package them up as a gift. Look how cute these are!

These look adorable! Do you happen to know any substitutes for the custard powder? I looked it up and it said Cornstarch could be used as a substitute. Do you know if it will work with these?

Hi Cami,
Yes you can substitute it for cornstarch and they will still work out, but it won't have the same yellow tinge. The soft melt-in-your mouth texture might be slightly compromised as well. Custard powder is pretty readily available in supermarkets so if you do see it I highly recommend using it!

Tip for anyone else making these: if you add a bit more sugar to the dough, these are delicious as regular cookies without filling.
