Strawberry tanghulu candied fruit skewer

Fresh fruit coated in a thin and crunchy layer of sugar, a refreshing, sweet treat, inspired by the classic Chinese treat tanghulu

Ingredients

  • 400g White sugar (2 cups)
  • 60ml Water (1/4 cup)
  • 85g Corn syrup (1/4 cup)
  • 12 strawberries, or your fruits of choice

Instructions

  1. Trim your strawberries, or your choice of fruit, and skewer them onto a bamboo or wooden skewer
  2. Combine the sugar, water and corn syrup together in a deep heavy-bottomed saucepan
  3. Heat over medium heat, swirling the pan occasionally until the sugar has dissolved
  4. Once dissolved stop swirling and heat the sugar mixture until it reaches 150C/300F - 160C/320F
  5. If you don't have a candy thermometer dip a spoon in the sugar mixture, then directly into a glass of ice water, if the sugar firms up immediately, it's ready
  6. Remove from the heat and immediately dip the fruit skewers in the sugar to coat
  7. Allow the excess sugar to drip and place on a baking tray lined with baking paper to set
  8. Enjoy immediately or place in an airtight container in the fridge
