Fudge brownie and soft chocolate chip cookie baked into a bar brookie

Fudgy chocolate brownie topped with chunks of soft chocolate chip cookie dough and milk chocolate. If you can't decide between a brownie or a cookie why not have both?!

Ingredients

Brownie

  • 125 g Unsalted butter, melted (1/2 cup)
  • 100 g Semisweet chocolate (3.5oz)
  • 2 Eggs, room temperature
  • 180 g Caster sugar (3/4 cups)
  • 35 g Flour (1/4 cup)
  • 40 g Cocoa powder (1/2 cup)
  • 1/2 tsp Baking powder
  • Pinch of salt
  • Pinch of flakey salt, for sprinkling

Chocolate Chip Cookie Dough

  • 105g Unsalted butter, softened (1/2 cup)
  • 50g Granulated sugar (1/4 cup)
  • 75g Brown sugar (1/2 cup 2 tbsp)
  • 170g Plain flour (1 1/2 cup 2 tbsp)
  • 3 tbsp Cornstarch
  • 1/2 tsp Baking soda
  • 1 Egg
  • 110g Milk chocolate, roughly chopped (1 cup)

Instructions

  1. Preheat the oven to 180°C (360°F)
  2. Line a brownie pan (8 x 8 inches) with baking paper
  3. Melt the butter and chocolate together in a medium sized bowl over a hot water bath or in the microwave
  4. In a large bowl add the eggs and caster sugar
  5. Using an electric beater, beat the eggs until doubled in volume and pale in colour 
  6. Add the chocolate and butter mixture into the eggs, stirring until combined
  7. Add the flour, cocoa powder, baking powder and salt, mix until just combined
  8. Pour into the lined pan
  9. Combine butter, sugar and brown sugar in another bowl, beat until well combined
  10. Add the eggs and beat until just combined
  11. Add the flour, cornstarch and baking soda, beat until dough begins to come together
  12. Reserve a few chunks of chocolate, then mix the chocolate into the cookie dough
  13. Tear the cookie dough into chunks using your hands and place them over the brownie batter
  14. Top with the reserved chocolate chunks and bake for 25-30 minutes. A toothpick inserted should come out with a few gooey crumbs.
  15. Cool, sprinkle with flakey salt and cut into squares
