Ingredients

Boba Dough

  • 1/4 cup brown sugar
  • 1/2 cup water
  • A drop of black food coloring (optional)
  • 2 tbsp tapioca starch
  • 12 cups tapioca starch (for kneading)

Brown Sugar Syrup

  • 1 cup brown sugar
  • 2 tbsp water

To Serve

  • Cold milk of your choice (whole, oat, almond, etc.)
  • Ice (optional)

Instructions

  1. In a microwave-safe bowl, mix water, brown sugar, and black food coloring (if using). Microwave for 1 minute to dissolve the sugar. Stir well.
  2. Add 2 tablespoons of tapioca starch and whisk until smooth.
  3. Microwave the mixture for 1–2 minutes, pausing to stir every 30 seconds, until it thickens into a sticky paste.
  4. Remove from the microwave. Gradually add 1–2 cups of tapioca starch, mixing and kneading until a soft, smooth dough forms.
  5. Roll the dough into small balls and dust lightly with more tapioca starch.
  6. Boil the boba balls in a pot of water for 30 minutes, stirring occasionally. Turn off the heat and let them sit for another 10 minutes.
  7. Strain and rinse the boba under cold water.
  8. While the boba cooks, make the syrup: In a small pot, combine 1 cup brown sugar and 2 tablespoons water. Bring to a gentle boil and cook for 5 minutes, stirring occasionally, until the sugar is fully dissolved and slightly thickened.
  9. Remove the syrup from heat. Add the cooked boba to the warm syrup and stir to coat well.
  10. To assemble, scoop boba and syrup into a glass, swirl the syrup up the sides, then pour in cold milk and ice. Stir and enjoy!
