Soft, moist and slightly fudgy chocolate loaf cake topped with a smooth chocolate ganache. A simple, yet absolutely delicious cake!

Ingredients

Loaf

  • 120g Unsalted butter (1/2 cup), cubed
  • 110g Dark chocolate, roughly chopped (3.8oz)
  • 120g Plain flour (1 cup)
  • 1/4 tsp Baking soda
  • 1 tsp Baking powder
  • 1 tsp Salt
  • 30g Cocoa powder (1/4 cup)
  • 90g Brown sugar (1/2 cup)
  • 100g White sugar (1/2 cup)
  • 2 Eggs
  • 140g Greek yoghurt/sour cream
  • 120ml Espresso/strong brewed coffee (1/2 cup)

Chocolate Ganache

  • 110g Dark chocolate (3.8oz), roughly chopped
  • 80g Thickened cream (1/3 cup)
  • Heavy pinch of salt

Instructions

Loaf

  1. Preheat the oven to 160C/320F
  2. Grease a 9 x 5 inch loaf pan with butter and dust with flour
  3. Melt chocolate and butter together in the microwave at 30 second intervals or over a double boiler, set aside
  4. Combine flour, baking powder, baking soda, salt, cocoa powder, white and brown sugar in a large bowl, whisk to combine
  5. Whisk eggs into the cooled chocolate/butter one at a time until smooth
  6. Add yoghurt/sour cream and espresso, whisk until smooth
  7. Add the wet ingredients to the dry ingredients and mix until just combined
  8. Transfer to the greased loaf tin and bake for 50-60 minutes, until an inserted toothpick emerges with a few moist crumbs
  9. Cool

Chocolate Ganache

  1. Place chocolate in a heat-proof bowl
  2. Heat the cream in a small saucepan until just boiling
  3. Remove from heat and pour over the chocolate, cover and let sit for 5 mins
  4. Uncover, add the salt and mix until smooth
  5. Spread warm ganache over cake
  6. Allow to set for 30 mins before serving
