- 180g Unsalted butter (3/4 cup), room temperature
- 90g Brown sugar (1/2 cup)
- 150g Granulated sugar (3/4 cup)
- 1 Large egg
- 1 tsp Vanilla extract
- 210g All purpose flour (1 3/4 cup)
- 1 tsp Baking soda
- Pinch of salt
- 2 tbsp Matcha powder
- 180g White chocolate, roughly chopped (6.3oz)
- In a large mixing bowl combine the room temperature butter, sugar, and brown sugar and whisk with an electric mixer until light and fluffy
- Add the egg and vanilla extract and mix until combined
- Add the plain flour, baking soda, salt and matcha powder into the wet mixture and stir until just combined
- Fold in the chopped white chocolate
- Cover the bowl with cling wrap and place in the fridge to chill for 1 hour
- Line a baking sheet with parchment paper
- Preheat the oven to 180C/355F
- Divide the chilled cookie dough into 12 balls and place on the lined tray
- Bake for 12 minutes, or until lightly golden
- Remove and cool on a cooling rack
