Soft and slightly chewy matcha white chocolate cookies with a crisp exterior. If you're a matcha lover these cookies are the perfect ones for you. 

Ingredients

Units Scale
  • 180g Unsalted butter (3/4 cup), room temperature
  • 90g Brown sugar (1/2 cup)
  • 150g Granulated sugar (3/4 cup)
  • 1 Large egg
  • 1 tsp Vanilla extract
  • 210g All purpose flour (1 3/4 cup)
  • 1 tsp Baking soda
  • Pinch of salt
  • 2 tbsp Matcha powder
  • 180g White chocolate, roughly chopped (6.3oz)

Instructions

  1. In a large mixing bowl combine the room temperature butter, sugar, and brown sugar and whisk with an electric mixer until light and fluffy
  2. Add the egg and vanilla extract and mix until combined
  3. Add the plain flour, baking soda, salt and matcha powder into the wet mixture and stir until just combined
  4. Fold in the chopped white chocolate
  5. Cover the bowl with cling wrap and place in the fridge to chill for 1 hour
  6. Line a baking sheet with parchment paper
  7. Preheat the oven to 180C/355F
  8. Divide the chilled cookie dough into 12 balls and place on the lined tray
  9. Bake for 12 minutes, or until lightly golden
  10. Remove and cool on a cooling rack
