Soft, crisp and chewy matcha green tea white chocolate cookies

Soft and slightly chewy matcha white chocolate cookies with a crisp exterior. If you're a matcha lover these cookies are the perfect ones for you. 

Ingredients

  • 110 g Unsalted butter (1/2 cup)
  • 70 g Brown sugar (1/3 cup)
  • 100 g Granulated sugar (1/2 cup)
  • 200 g All-purpose flour (1 2/3 cup)
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 2 tsp Matcha powder
  • 1 Large egg
  • 1 Egg yolk
  • 200 g White chocolate (3.5oz)
  • Flakey salt

Instructions

  1. Preheat the oven to 180C/355F and line a baking tray with parchment paper
  2. In a small saucepan heat the butter over medium heat until dark golden brown (there should be specks of brown milk solids at the bottom of the pan)
  3. Remove from heat and cool for 5 minutes
  4. In a large mixing bowl whisk together the plain flour, baking powder, baking soda and matcha powder
  5. Add white and brown sugars into the cooled brown butter, along with the egg and egg yolk, mix until well combined
  6. Add the dry ingredients into the wet mixture and stir until just combined
  7. Fold in the chopped white chocolate
  8. Divide the dough into 9 even balls, flatten slightly and place on the lined baking sheet
  9. Place the tray in the freezer to chill for 30 minutes (or fridge for an hour)
  10. Bake at 180C/ 355F for 15 minutes
  11. Remove and cool on a cooling rack
