Crispy pineapple bun toast: an easy and delicious take on the traditional Cantonese treat bolo bao!

Ingredients

  • 2 tbsp Unsalted butter, softened
  • 2 tbsp Granulated Sugar
  • 3 tbsp All purpose flour
  • Pinch of Salt
  • 2 slices of White bread
  • 1 Egg yolk, beaten

Instructions

  1. Preheat the oven to 180C/350F
  2. Combine all the ingredients in a small bowl and mix until it forms a smooth paste
  3. Divide the paste between the two slices of bread and spread the paste into a thin layer over the bread
  4. Using the back of a knife score the paste in a crisis cross pattern that resembles a pineapple
  5. Using a pastry brush, brush the surface of the toast with the beaten egg yolk
  6. Place the toast on a wire rack and bake for 8-10 minutes, or until the cookie topping is baked and the toast is golden brown
