Crispy pineapple bun toast: an easy and delicious take on the traditional Cantonese treat bolo bao!

- 2 tbsp Unsalted butter, softened
- 2 tbsp Granulated Sugar
- 3 tbsp All purpose flour
- Pinch of Salt
- 2 slices of White bread
- 1 Egg yolk, beaten
- Preheat the oven to 180C/350F
- Combine all the ingredients in a small bowl and mix until it forms a smooth paste
- Divide the paste between the two slices of bread and spread the paste into a thin layer over the bread
- Using the back of a knife score the paste in a crisis cross pattern that resembles a pineapple
- Using a pastry brush, brush the surface of the toast with the beaten egg yolk
- Place the toast on a wire rack and bake for 8-10 minutes, or until the cookie topping is baked and the toast is golden brown
