Super easy and fun slice and bake cookies! Complete with the colours of the rainbow these cookies are short, buttery and delicious too.

Ingredients

3cups Plain flour (375g)
1cup White sugar (210g)
1cup Unsalted butter, softened (2 sticks) (225g)
1 Egg
1 tsp Vanilla extract
Food colouring, red, yellow, blue, green, purple
Instructions
In the bowl of a stand mixer beat the butter until smooth
Add the sugar, egg and vanilla extract, beat until well combined
Pour in the flour and mix on low speed until incorporated
Divide the dough into 5 equal portions and colour each portion red, green, yellow blue and purple
Roll each colour into a long log and press all 5 together
Place the log on a sheet of cling wrap and wrap tightly while rolling into an even log
Place the dough in the fridge to set for at least 2 hours, or overnight
Preheat the oven to 180C
Remove the log from the cling wrap and slice into 1/4" or 6 mm thick slices
Place on a lined baking sheet and bake for 9-10 mins
Optional if you are looking for perfectly round cookies: Use a cookie cutter slightly smaller than the diameter of your baked cookies and cut them out while still hot
