A quick and easy way to enjoy coffee buns aka rotiboy, without having to make it completely from scratch! This coffee bun toast is sweet, buttery and crunchy, the perfect way to start your morning.

Ingredients

  • 80g Unsalted butter, softened (1/3 cup)
  • 65g Granulated sugar (1/3 cup)
  • 1 Large egg, room temperature
  • 80g All-purpose flour (2/3 cup)
  • 4g Instant coffee powder (3 tsp)
  • 1 tbsp Hot water
  • 4-5 Slices of white bread

Instructions

  1. Preheat the oven to 180C/350F
  2. Combine the coffee and hot water and mix until dissolved
  3. Combine all the ingredients in a small bowl and mix until it forms a smooth paste
  4. Divide the paste between the two slices of bread and spread the paste into a thin layer over the bread
  5. Place the toast on a wire rack and bake for 8-10 minutes, or until the cookie topping is baked and the toast is golden brown
