Easy, creamy raspberry overnight oats topped with yogurt, raspberry jam, and a white chocolate magic shell. These oats are like dessert for breakfast!

Ingredients

Overnight oats

  • 1/2 cup Rolled oats
  • 1/2 cup Milk of choice, i.e. almond, oat or whole milk
  • 1 tbsp Sweetener of choice, i.e. maple syrup, honey or agave
  • 2 tsp Chia seeds

Toppings

  • 2 tbsp Raspberry jam
  • 2 tbsp Greek yogurt
  • 50g White chocolate (1.8oz)
  • 1 tsp Coconut oil

Instructions

Overnight oats

  1. Combine the rolled oats, milk, sweetener and chia seeds in a bowl
  2. Stir to combine, cover and place in the fridge to soak overnight or a minimum of 4 hours

Assembly

  1. Spread a layer of yogurt over the top of the soaked oats
  2. Spread a layer of raspberry jam over the yogurt
  3. Combine the white chocolate and coconut oil in a microwave-safe bowl and microwave for 30-second bursts until completely melted, stirring in between.
  4. Pour the chocolate over the top and tilt the bowl to spread it evenly across the surface of the oats
  5. Place in the freezer for 15 minutes, or the fridge for 30 minutes, to set
  6. Top with raspberries and enjoy!
