Why make these overnight oats?
Raspberry and white chocolate is one of those flavor combinations that can never go wrong. The sweetness of the white chocolate offsets the tanginess of the raspberries for a flavor that is perfectly balanced.
These "magic shell" overnight oats have been trending on TikTok for so long and I can see why! The satisfaction of breaking through that white chocolate shell to reach the creamy oats beneath is unmatched.
While it looks a little complicated, it's actually the complete opposite. The oats come together so easily, and they taste like having dessert for breakfast!
How to make the magic shell
The magic shell is very easy to make! The secret ingredient to making the magic shell is coconut oil. As coconut oil is in liquid form when warm, it helps to thin out the melted white chocolate, spreading in a thin layer over the oats.
As coconut oil sets solid when cold it will firm up with the chocolate when chilled. This creates that satisfying crack when you break through the shell to your oats beneath.
A few tips that will help when making your chocolate shell...
Don't overheat your chocolate
Overheating the chocolate will cause the chocolate to seize or burn. Seized chocolate is when it starts to dry out and clump up.
To prevent this melt your chocolate at 30-second intervals in your microwave, stirring in between each interval to ensure that the heat is distributed evenly. If you are using a hot water bath to melt your chocolate ensure that you stir it constantly and prevent any water from entering the chocolate as this will also cause it to seize.
Add more coconut oil if needed
Different kinds of chocolate will act differently when melted. Some chocolate will be thicker or thinner than others so you can adjust the amount of coconut oil as needed.
The chocolate should be thin enough to spread across the top of your oats just by tilting your bowl around.
Chill the chocolate
Chilling the chocolate helps it firm up to that crackable consistency. I like to put mine in the freezer for 10 to 15 minutes. This is super quick and results in a super satisfying chocolate crack.
Recipe Variations
There are so many different variations you can make...
Dark chocolate raspberry oats
Add 1 tablespoon cocoa powder to the oats. Then top the oats with dark chocolate rather than white chocolate. This creates a rich and chocolatey overnight oat.
Fresh fruits
Replace the raspberry jam with crushed fresh raspberries for a version with fresh fruits. Or use any kind of fruit you like from fresh berries like blueberries, blackberries, and strawberries to others like bananas and mangoes. There are endless options!
Of course the fruits don't have to be fresh, frozen berries are some of my favourite oat add-ins.
Super creamy oats
If you want your oats to be extra thick and creamy add a tablespoon or two of yogurt to the initial mixture of oats. This will give your oats that extra oomph and texture.
Vegan oats
Replace the white chocolate with your choice of vegan chocolate and use your favorite dairy-free yogurt, whether that be coconut, almond, or oat!
Protein oats
If you want to give these an extra boost of protein while making them thicker and creamier add a scoop of your favorite protein powder to the oats. Bonus points if they are a flavor that works with raspberry and white chocolate!
Nutty
Peanut butter is oat's best friend. Drizzle these oats with peanut butter or any kind of nut butter for an extra boost of healthy fats and deliciousness.

How long do overnight oats need to soak?
Overnight oats need to soak for a minimum of 4 hours for optimal consistency. I find soaking them overnight, for about 6-8 hours, gives them the best consistency.
What kind of oats should I use for overnight oats?
The best kind of oats to use for overnight oats is old-fashioned oats or rolled oats, these will give the best texture without the oats being too soggy or too firm.
Quick oats will soak up too much of the liquid, becoming too soft and soggy.
Steel-cut oats need more time to soak, so I wouldn't recommend using them for overnight oats. They are more suited to being cooked as oatmeal in porridge.
What should I make overnight oats in?
You can make overnight oats in anything you like! A mason jar or any kind of jar makes these perfect on the go, otherwise, you can make this in a cute bowl as I have.
How many servings does this make?
You can split this into two bowls for two small servings, or serve it in one large bowl as one serving!
Can I eat this warm?
Yes, you can! While overnight oats are usually eaten cold, they are great warm too!
Because they have soaked overnight the oats have softened up enough that they don't need to be cooked over an extended amount of time. All they need is a quick zap in the microwave to bring them to the right consistency.
If you made them with the magic chocolate shell they will melt into the delicious pool of molten white chocolate on top of your oats.
How long does this last?
Once made these will last up to 4 days when stored in an airtight container in your fridge. That's why these are a great breakfast to meal prep.

Raspberry White Chocolate Overnight Oats

Ingredients
Overnight oats
- ½ cup Rolled oats
- ½ cup Milk of choice, i.e. almond, oat or whole milk
- 1 tbsp Sweetener of choice, i.e. maple syrup, honey or agave
- 2 tsp Chia seeds
Toppings
- 2 tbsp Raspberry jam
- 2 tbsp Greek yogurt
- 50g White chocolate (1.8oz)
- 1 tsp Coconut oil
Instructions
Overnight oats
- Combine the rolled oats, milk, sweetener and chia seeds in a bowl
- Stir to combine, cover and place in the fridge to soak overnight or a minimum of 4 hours
Assembly
- Spread a layer of yogurt over the top of the soaked oats
- Spread a layer of raspberry jam over the yogurt
- Combine the white chocolate and coconut oil in a microwave-safe bowl and microwave for 30-second bursts until completely melted, stirring in between.
- Pour the chocolate over the top and tilt the bowl to spread it evenly across the surface of the oats
- Place in the freezer for 15 minutes, or the fridge for 30 minutes, to set
- Top with raspberries and enjoy!
