What is a cookie pizza?
A cookie pizza is a delicious dessert that combines the best of both worlds – the classic flavors of a cookie with the fun presentation of a pizza. Essentially, it's a large cookie baked in a round shape, resembling a pizza
The base of a cookie pizza is usually a soft and chewy cookie dough, similar to what you might use for traditional cookies. However, because of its larger size, the dough may be adjusted slightly to ensure it bakes evenly and maintains a chewy texture throughout.
Ingredients
- Unsalted Butter: Butter provides richness and flavor to the cookie dough. It also helps create a tender and moist texture.
- Granulated Sugar: Granulated sugar adds sweetness to the cookie dough and contributes to its structure. It also helps with spreading and browning during baking.
- Brown Sugar: Brown sugar adds moisture and chewiness to the cookie dough. It also adds a subtle molasses flavor, enhancing the overall taste of the cookie.
- All-Purpose Flour: Flour is the main dry ingredient in the dough, providing structure and stability. It helps give the cookie its shape and prevents it from spreading too much during baking.
- Cornstarch: Cornstarch is often used in cookie recipes to create a softer texture. It helps tenderize the dough and adds a slightly crumbly texture to the finished cookie.
- Baking Soda: Baking soda is a leavening agent that helps the cookie dough rise slightly during baking, resulting in a softer and lighter texture.
- Large Eggs: Eggs act as a binder in the dough, helping to hold everything together. They also contribute to the structure and richness of the cookie.
- Dark Chocolate: Dark chocolate adds richness and depth of flavor to the cookie. When roughly chopped and mixed into the dough, it creates pockets of gooey melted chocolate throughout the cookie, adding bursts of chocolatey goodness.
Frequently Asked Questions
Can I use salted butter instead of unsalted butter?
Yes, you can substitute salted butter for unsalted butter in this recipe. Just be mindful of the overall saltiness of the dough and adjust the amount of additional salt accordingly.
What if I don't have a 9-inch cake tin? Can I use a different pan?
While a 9-inch cake tin is recommended, you can use a similar-sized baking dish or pan. Just make sure to adjust the baking time accordingly if using a different size or type of pan.
Can I reduce the amount of sugar in the recipe for a less sweet cookie pizza?
Yes, you can adjust the amount of granulated and brown sugar to suit your taste preferences. However, keep in mind that sugar contributes to the texture and structure of the cookie, so reducing it too much may affect the final result.
Is there a substitute for cornstarch in the recipe?
If you don't have cornstarch on hand, you can try using arrowroot powder or potato starch as a substitute. Keep in mind that the texture of the cookie may vary slightly with different substitutes.
How do I know when the cookie pizza is done baking?
The cookie pizza is ready when it turns golden brown around the edges and the center is set. You can also insert a toothpick into the center – if it comes out clean or with a few crumbs attached, it's done.
Can I add other mix-ins besides dark chocolate?
Absolutely! Feel free to customize the recipe with your favorite mix-ins, such as white chocolate chips, nuts, dried fruit, or candy pieces. Just ensure that the total amount of mix-ins remains similar to the weight of the dark chocolate called for in the recipe.
How should I store leftovers, and how long will they stay fresh?
Store any leftover cookie pizza in an airtight container at room temperature for up to 3-4 days. You can also freeze individual slices for longer storage, wrapping them tightly in plastic wrap and aluminum foil.
Can I prepare the dough ahead of time and bake it later?
Yes, you can prepare the cookie dough in advance and refrigerate it for up to 24 hours before baking. Alternatively, you can freeze the dough for up to 3 months. Allow frozen dough to thaw in the refrigerator overnight before baking.
Can I make the cookie pizza gluten-free?
Yes, you can experiment with gluten-free flour blends as a substitute for all-purpose flour to make a gluten-free version of the cookie pizza. However, you may need to adjust the recipe slightly to achieve the desired texture and flavor.
What serving suggestions do you recommend for the chocolate chip cookie pizza?
Serve slices of the cookie pizza warm with a scoop of ice cream on top for an indulgent dessert. You can also drizzle melted chocolate or caramel sauce over the slices for extra decadence. Enjoy!
Can I decorate it like a pizza?
Yes! Thats the fun thing about this recipe, you can take it literally as a pizza base and top it with whatever you like. I would use some sort of frosting like butter cream or cream cheese frosting, or spread like Nutella or peanut butter as a base. Spread it over the cookie, then top it with fruit to make a fruit pizza. You can use anything including raspberries, strawberries, blueberries, grapes, banana, pineapple, kiwi and so much more.
Or you can go in the other direction and top it with more sweet toppings like sprinkles, m&m and lollies.
