Silky smooth rum-spiked mascarpone cream between layers of sweet strawberry-soaked ladyfingers and jam, this is what you call a strawberry tiramisu.
What is tiramisu?
Tiramisu is a traditional Italian dish made from espresso-soaked ladyfingers, mascarpone cream, and cocoa powder. This delicious dessert is layered and served chilled. An absolute treat for coffee lovers, and one of my all-time favorite desserts.
Why make a strawberry tiramisu?
However, there are days when the fruity cravings hit and this is the exact kind of dessert you want to be having!
This strawberry tiramisu replaces the espresso by dipping the ladyfingers in homemade strawberry syrup. The mascarpone cream is enriched with egg yolks and spiked with rum for a super silky cream that pairs perfectly with the tangy strawberry jam and ladyfingers.
Ingredients
Strawberry Jam
- Strawberries: Fresh or frozen strawberries will work here! Make sure they are chopped up so they cook down evenly.
- Granulated sugar: Sugar is used to sweeten the strawberries and helps it thicken up into a strawberry jam!
Mascarpone Cream
- Egg yolks: Egg yolks are traditionally used in tiramisu. This gives the cream a rich flavor and texture. This is perfectly safe to eat but if you aren't a fan of raw eggs feel free to leave them out, it'll still be a delicious tiramisu.
- Granulated sugar: Sugar sweetens the cream! Feel free to increase or decrease this according to your personal preference
- Rum: Rum helps to cancel out some of the egginess from the egg yolks, while also giving the cream a delicious flavor. If you don't want to use rum feel free to use vanilla extract.
- Mascarpone cheese: Mascarpone cheese makes up the body of the cream, make sure you whip this to stiff peaks to prevent it from oozing everywhere when assembling the cake!
- Heavy cream: Cream is not traditionally used in tiramisu, however with this strawberry tiramisu it works better than the traditional egg whites. This helps to lighten the mascarpone cream while keeping it super creamy.
Assembly
- Ladyfingers: You can use storebought ladyfinger or make your own! If you want to make your own I have a recipe here in my best tiramisu recipe.
- Warm water: This water is mixed with the strawberry jam to make a strawberry syrup you can dip your ladyfingers in.
- Fresh strawberries: Top your tiramisu off with a couple of fresh strawberries for a burst of freshness and colour.
- Freeze-dried strawberry powder: If you have freeze-dried strawberry powder it is perfect for dusting over the top as it gives the cake an extra boost of strawberry flavour while also giving a pretty pink dusting over the cake!
Frequently Asked Questions
How long does this last?
This cake will last up to 3 days when stored in an airtight container in the fridge.
Keep in mind that the longer you store this the more liquid will escape from the ladyfingers. This can result in a small pool of syrup at the bottom of your cake, but don't worry it's perfectly normal and safe to eat.
Can I make this with a different fruit?
Yes you can make this whatever fruit you like! I think berries like raspberries, blueberries and blackberries work particularly well as they make a great jam and pair so well with mascarpone cream.
Can I use store-bought strawberry jam?
If you are in a rush store bought strawberry jam is one of the easiest options! Just ignore the first step where we make the strawberry jam.
To make the strawberry syrup simply dissolve about ½ cup of strawberry jam in the warm water. You can add more or less according to your taste.
Why is my cream curdling?
There are a couple of reasons why your cream may be curdling:
- The ingredients were all too warm
- The mascarpone cheese was over whipped
- The whipped cream was over whipped

Strawberry Tiramisu

Ingredients
Strawberry Jam
- 150g Strawberries, roughly chopped
- ¼ cup Granulated sugar
Mascarpone Cream
- 4 Egg yolks
- 150g Granulated sugar (¾ cup)
- 1 tbsp Rum
- 500g Mascarpone Cheese (18 oz)
- 240ml Heavy cream (1 cup)
Assembly
- 27 Lady fingers
- 240ml Warm water (1 cup)
- Strawberries, to decorate
- Freeze-dried strawberry powder, to dust (optional)
Instructions
Strawberry Jam
- Combine the strawberries and sugar in a small saucepan over medium-high heat and cook, stirring occasionally for 5-10 minutes, or until thickened and glossy
- Remove from the heat and cool completely
Mascarpone Cream
- Combine the egg yolks and sugar in the bowl of a stand mixer fitted with the whisk attachment or a large mixing bowl with an electric mixer and beat until light in color and doubled in volume
- Add the rum and mix to combine
- Add the mascarpone cheese and whip until it reaches stiff peaks
- In a medium-sized mixing bowl whip the heavy cream until stiff peaks
- Add the whipped cream to the mascarpone mixture and fold gently to combine
- Transfer the cream to a piping bag fitted with a large round piping tip and reserve in the fridge until ready to use
Assembly
- Combine three-quarters of the strawberry jam and the warm water in a shallow bowl, and store to combine
- Prepare a large rectangular serving platter or baking dish for your tiramisu
- Dip a lady finger in the strawberry syrup and lay it on your serving platter
- Repeat with 8 more ladyfingers, forming a single layer of ladyfingers in a line across the platter
- Pipe the mascarpone cream in a layer over the ladyfingers, then top with a drizzle of the remaining jam
- Repeat with another row of dipped ladyfingers, cream, and jam
- Top with the last row of ladyfingers, the remaining mascarpone cream and a dusting of freeze-dried strawberry powder (if you don't have freeze-dried strawberry powder feel free to use icing sugar instead)
- Decorate with fresh strawberries and enjoy!
