No one likes a cakey cookie! Cakey cookies tend to be quite dry, with a much lighter texture. On the other hand, chewy cookies have more moisture and denseness for a very satisfying cookie bite.

- Unsalted butter, room temperature: Unsalted butter works great in this recipe, but if you prefer a cookie that is less-sweet feel free to use salted butter. If you use salted butter don't add a pinch of salt otherwise your cookie will be too salty!

There are a couple of tips that can help you get your cookies to chewy perfection. Follow these pointers to get the cookie of your dreams.
Use more brown sugar than white sugar
Most recipes will use a mix of brown and white sugar to make their cookies. The brown sugar adds extra flavor and moisture to the cookie, while the white sugar enhances the sweetness while giving them a light texture.
This recipe uses a ratio of 2:1 of brown sugar and white sugar. This ratio is perfect for giving the cookies the right amount of chew without them becoming overly sweet, or overly dense.
Chill your cookie dough

Use a cookie scoop
Cookie scoops give your cookies the perfect shape. This hemisphere allows the edges of the cookie to get slightly crispy while keeping the center tall, soft, and chewy.
Add an extra egg yolk (optional)

Can I freeze these?

Frozen cookies will last up to a month in the freezer.
If you are freezing the cookie dough, shape them into balls and place them in the freezer. When you are ready to eat one simply preheat your oven and place the cookie on a baking sheet lined with parchment paper. Then bake for 14-15 minutes until golden.
How do I make chewy cookies crispy?

Ingredients
- 120g Unsalted butter, room temperature (½ cup)
- 90g Brown sugar (½ cup)
- 50g White sugar (¼ cup)
- 1 Egg
- 1 tsp Vanilla extract
- 180g Plain flour (1 ½ cup)
- ½ tsp Baking soda
- ½ tsp Baking powder
- Pinch of salt
- 200g Semi-sweet chocolate bar, roughly chopped (7.05oz)
- Flakey salt, for sprinkling
Instructions
- Preheat the oven to 180C/533F, fan forced
- Line an oven tray with baking paper
- Combine the butter, brown sugar, and white sugar in a large bowl and mix until well combined
- Add the egg and vanilla, and beat until combined
- Add the flour, baking powder, baking soda, and salt, and mix until just combined
- Fold in the chopped chocolate
- Cover with cling wrap and place in the fridge to chill for at least 1 hour
- Remove from the fridge and shape into 12 balls
- Place the cookie dough balls on the lined oven tray, making sure to leave enough space between each ball for the cookie to spread
- Bake for 12 to 13 minutes, until golden brown
- Cool for 30 minutes and enjoy!

Hi Catherine, I’ve just made your brownies and they tasted absolutely amazing. However I can’t seem to cook and set the brownie, I have left it in the oven to bake for an additional 15mins (45mins in total) but they are still very soft in the middle (barely cooked). Hi Jaymie, some ovens aren't as hot as others so you can continue to bake it for a little longer, until the centre is still soft but set. The won't be fully cooked until dry in the centre as that ruins their fudgy texture 🥳
