This is going to be one of the easiest cakes you've ever made, and you'll think how?!! If you are in a pinch and need cake ASAP this is the cake for you. All you need is some ice cream, flour, and baking powder.
If you want to make this a two-ingredient cake you can even use just ice cream and self-raising flour.
Customize this cake according to your preferences with your favorite ice cream and toppings for a delicious cake that will satisfy any sweet craving.
Ingredients
Ice-Cream
While all ice creams will work for this recipe try to use high-quality ice cream. Low-quality ice cream has a lot of air, and other fillers to bulk it up. This means that when it is melted down there will be less ice cream and the ingredients in it just aren't as flavorful.
You can also use ice creams with chunks and add-ins, but keep in mind that these will affect the final texture of the cake. They may cause pockets of gummy textured cake, or they could create surprise pockets of delicious filling.
The choice is yours, but if you want a consistent cake then go for a plain ice cream like vanilla or chocolate!
Flour
I use all-purpose flour aka plain flour as that is the most accessible flour in most households. If you have self-raising flour you can use that instead, and your cake will only need 2 ingredients!
Baking powder
Baking powder is needed to give the cake that fluffy texture and rise. Without it, the cake won't be able to rise and will end up very dense and heavy. If you are using self-raising flour you can omit this.

How long does this last?
This cake is best eaten straight out of the microwave. At this stage, the cake will still be warm, light, and fluffy. The cake will slowly start to sink after it comes out of the microwave, becoming slightly denser and stodgier in texture.
What kind of ice cream can I use?
This cake will work with any kind of ice cream, but the best results will come from high-quality plain ice cream. Plain meaning free from extra add-ins and chunks as these can affect the texture of the final cake.
That being said it does still work with other kinds so if you are in a pinch use whatever ice cream you have in your fridge.
Why is my cake rubbery?
The cake can turn out rubbery for a couple of reasons:
- The baking powder was old/inactive: This means that the cake won't rise when cooked.
- The cake batter was overmixed: The more you mix cake batter the denser and more rubbery it'll become.
- The cake hadn't been cooked for long enough: If the cake hasn't been microwaved for long enough it will sink when it comes out of the microwave, resulting in a soggy, rubbery cake.
What kinds of toppings can I use on this?
It really is up to your imagination! I topped mine with a scoop of ice cream and a drizzle of chocolate sauce. Here are a couple of other ideas:
- Whipped cream: Can't go wrong with whipped cream as a topping, it'll also melt into the cake giving it more moisture.
- Fresh fruits: Fresh fruits and cake is a combination that balance each other out perfectly.
- Chocolate chips: You can mix these into your cake batter before cooking it for pockets of melted chocolate in your cake.
- Sauces: From caramel to chocolate, the different kinds of sauces you can use are endless and definitely delicious.
- Sprinkles: A fun topping for kids, or just yourself!
- Crushed biscuits: Crushed Oreos are one of my favorite toppings on ice cream, so why not a mug cake?

Ice Cream Mug Cake

Ingredients
- 1 cup Ice cream of your choice
- ½ cup All purpose flour
- ½ tsp Baking powder
- Toppings of your choice
Instructions
- Put the ice cream in a large microwave-safe mug or divide it between two small microwaveable mugs
- Microwave the ice cream for 30 seconds or until just melted
- Add the flour and baking powder and mix until just combined (if making it in two small mugs used ¼ cup flour and ¼ teaspoon baking powder in each mug)
- Microwave the large mug for 2 minutes, and the smaller mugs for 90 seconds, or until cooked thrugh
- Remove from the microwave and top with your desired toppings
