Tips for Perfect Watermelon Ice-Cream

  • Choose Ripe Watermelon: The flavor of your ice cream heavily depends on the sweetness and ripeness of the watermelon. A ripe watermelon should feel heavy for its size, have a creamy yellow spot from where it rested on the ground, and sound hollow when tapped.
  • Strain the Watermelon Juice: To ensure a smooth texture, strain the watermelon juice through a fine mesh to remove any fibers and seeds. This step is critical as it affects the final texture of your ice cream.

  • Sweeten Carefully: While sweetened condensed milk adds richness and sweetness, adjusting the amount based on the sweetness of the watermelon is key. Taste as you go to ensure the right balance.
  • Make Ahead: Making your ice cream a day ahead of when you plan to serve it allows it to firm up properly in the freezer, ensuring it holds its shape and texture when scooped.

Common Mistakes to Avoid

  • Insufficient Straining: Not straining the watermelon juice adequately can lead to a gritty, icy texture in the ice cream. Make sure to use a fine mesh sieve to get a smooth, juice-only mixture.
  • Underfreezing: If the ice cream isn’t frozen long enough, it can be too soft or slushy. Ensure it spends enough time in the freezer to reach the desired firmness.
  • Ignoring Temperature Fluctuations: Placing the ice cream in the door of the freezer can expose it to temperature changes every time the door is opened, leading to a less consistent texture.
