What is matcha?
Matcha is essentially ground-dried green tea leaves. Originating in Japan, this tea is smooth, bitter, and a great antioxidant. It has so many great health properties with abilities to promote heart and liver health, prevent cancer, boost brain health and metabolism, etc. And on top of all that it tastes delicious!
Whether it be in matcha lattes or truffles, once you fall for the slightly bitter taste of matcha there is no going back.
How do you make no-churn ice cream?
Making no-churn ice cream is super easy! I love making ice cream at home because it is so easy, but most people don't have an ice cream maker just sitting in their kitchen.
This is when no-churn ice cream comes in. The taste is the same, if not better than regular ice cream because it's made with condensed milk. This adds sweetness and extra creaminess to the mixture.
Here are a couple of things to keep in mind when making no-churn ice cream:
- Make sure you whip the cream and condensed milk up to stiff peaks. The whipping of air is what gives the ice cream that scoopable consistency.
- Make sure you use all the condensed milk. The condensed milk is what keeps the ice cream soft and scoopable. It also adds sweetness to the ice cream.
- When serving let the ice cream sit at room temperature for 10-15 minutes before scooping. This gives the ice cream time to soften up and come to the perfect consistency!
Ingredients
- Heavy cream: Aka thickened cream. This makes up the body of the ice cream. Make sure you use full-fat cream as this will give your ice cream the most creamy texture. Regular whipping cream will also work here.
- Condensed milk: Condensed milk is essential when making no-churn ice cream. The condensed milk keeps the frozen cream from freezing completely and becoming rock solid. It also adds sweetness to the ice cream overall.
- Matcha: As this is a matcha ice cream it is important that you choose a high-quality matcha powder. A high-quality green tea powder will be brighter in color and stronger in flavor. I like to use high-quality culinary-grade matcha for this. Ceremonial grade matcha powder is probably overkill in this situation!

How long does this last?
When stored in an airtight container in the freezer this will last up to a month. However, it is best eaten within the first week as the ice cream will become icier and harder over time.
How should I store homemade ice cream?
Make sure you store the ice cream in an airtight freezer-safe container. This prevents ice crystals from forming on the surface of the ice cream.
If you have ice cream containers at home they are even better as they usually have thicker walls than regular containers and keep it smoother for longer.
Can I make this in an ice cream machine?
If you are making this ice cream in an ice cream machine it doesn't need to be whipped beforehand. Just mix the ingredients together and churn. This is a super easy 3-ingredient way to make ice cream.
However, if you do have an ice cream machine I recommend making an ice cream base with whole milk and egg yolks and churning that instead. The flavor will be a lot richer due to the eggs used. Here are a couple of ice cream recipes I have on my blog!
Can I add toppings to the ice cream mixture?
Yes, you can! This ice cream batter is super versatile and you can add pretty much any topping you like. Here are a couple of my favorites.
- Strawberries: Make a quick jam by boiling down strawberries with sugar, cool then fold it through.
- Chocolate chips: Chocolate and matcha is a better combination than you think! Personally, I love white chocolate with matcha.
- Nuts: Crushed nuts are a great addition. White chocolate and macadamia nuts are a personal favorite, but walnuts, hazelnuts, and peanuts are also delicious!

No Churn Matcha Ice Cream Recipe

Ingredients
- 600ml Heavy cream (2 ½ cups)
- 300ml Condensed milk (1 can, 14oz)
- 3-4 tablespoon Matcha powder, according to your taste preference
Instructions
- Put the heavy cream in the bowl of a stand mixer fitted with a whisk attachment or in a large bowl and beat it with an electric mixer until it stands at medium-stiff peaks
- Add the condensed milk and whisk until completely incorporated
- Sift in 3-4 tablespoons of matcha powder (adjust according to your personal preference) and mix until smooth and combined
- Transfer the mixture into an airtight container and place in the freezer to chill for 4-6 hours, or overnight
- When ready to serve let it sit out at room temperature for 10-15 minutes, then scoop and enjoy!
