- Brown sugar: Brown sugar gives the cookies a deeper more caramelized flavor than regular sugar. It also helps to give the cookies a little bit of chew
- Granulated sugar: Regular sugar gives the cookies sweetness as well as a lighter texture
- Egg: Egg helps to bind the cookie dough together and give it a fluffy interior
- All-purpose flour: Flour is the base that holds the cookies all together, if you add too much the cookie will become dry and crumbly so be careful
- White chocolate chips: Chocolate chips are that surprise in every bite, make sure you use a good quality white chocolate for the best flavor
- Ube extract: This is optional but I think ube extract gives the cookies great flavor while also a vibrant purple hue
- Matcha powder: Use a good quality matcha powder for a vibrant green color, you can add as much or as little as you'd like
- Zest of one orange: Orange zest gives the cookies another layer of flavor, and it suits that Halloween orange color!

Halloween Cookies

Ingredients
- 120g Unsalted butter, room temperature (½ cup)
- 90g Brown sugar (½ cup)
- 50g Granulated sugar (¼ cup)
- 1 Large egg, room temperature
- 210g All purpose flour (1 ½ cups)
- 150g White chocolate chips (1 cup)
- Candy eyeballs and sprinkles
- ¼ tsp Ube extract
- 1 tsp Matcha powder
- Zest of one orange and orange food coloring
Instructions
- Preheat the oven to 180C/350F and line a baking tray with baking paper
- In a large bowl combine the butter, brown sugar, and granulated sugar, and beat using an electric mixer until smooth and fluffy
- Add the egg and beat until just combined
- Add the flour and baking soda and mix until a cookie dough forms
- Add the chocolate chips and stir until combined
- Divide the cookie dough into 3 and color each with ¼ teaspoon ube extract, 1 teaspoon matcha powder, and the zest of one orange with orange food coloring
- Divide each flavored dough ball into 3, creating 9 balls in total
- Place the dough balls on the lined baking tray and flatten slightly
- Bake for 10-14 minutes, or until firm on the edges and soft in the center
- Remove from the oven and cool for 5-10 minutes before decorating with the candy eyeballs and sprinkles
