Langues de Chat aka cat tongues are a classic French cookie, this version takes a Japanese twist by sandwiching two crisp cookies around a sweet white chocolate matcha filling. The result is a unique, crisp, moreish, sweet and slightly bitter cookie!
I’ve noticed that asian flavours seems to be popular on both my instagram and blog so I decided to share a quick and easy matcha cookie recipe that anyone can make!
This is a take on a popular sandwich cookie that is sold in Japan. A crispy cookie with a smooth tempered matcha white chocolate filling. Everyone’s preference on matcha strength seems to differ, so you can adjust the amount of matcha powder to your preferred strength. Also depending on the brand and grade of matcha powder you use the intensity can change. I’ve found that cheaper matcha powders seem to have a lighter taste, so don’t forget to taste as you go. I use premium culinary grade matcha powder from Japan, and a little goes a long way!

Another tip is to make sure that you tap the trap enough so that the cookies flatten, and ensure that the cookies have been baked long enough to be crispy throughout. The first few times I made this recipe I found that they tend to under-bake, so pay attention to these points! Otherwise these cookies should be delicious~

Thanks for sharing a beginner recipe! This looks sooo yummy. They definitely don't have the best matcha available where I live, but I'll be sure to try. Thanks, Catherine!!!

You can always do it without the matcha powder and it will still be delicious! Let me know how. it goes 🙂

Hello!
Can I use salted butter if that is all I have 🫠?!
💞thank you!
Catherine Zhang
Hi! You can, but keep in mind that the cookies won't be as sweet and might be a little salty!

Hi Catherine!
Thanks for sharing this recipe! My cookies turned out really brown at the edges and the middle was still soft and chewy. :/
Could I have done something wrong?
Hannah
Hi Catherine! I just wanted to thank you so much for this recipe. I tried it out a couple days ago and it turned out incredible! I was very worried because I’m a novice baker but the instructions were clear and easy to follow, my family was so impressed! 🙂
